Let's try to travel with our imagination back in time: it's the 1950s, and the population of Matera, mostly composed of farmers, mostly lives in caves carved into the tuff. Large families live in precarious hygienic conditions,
in the company of animals with whom they share their workday.
Palmiro Togliatti, visiting Matera in 1948, called the Sassi "National shame," and four years later (on 17 May),
the "Special Law for the evacuation of the Sassi" was enacted.
After fifty years, the Sassi districts were still frozen in their state of abandonment.
Morgan Ristorante was born as a Brewery with a kitchen in 1997 as the first activity to settle in the Sassi district.
In 2011, Morgan becomes a restaurant.
Typical Lucanian cuisine is very traditional and is based on products from the land
and local livestock.
Despite the surprisingly basic simplicity of Lucanian dishes, Lucanian cuisine offers a considerable variety of recipes.
The skill and innovation of our chefs also extend the experience to contemporary cuisine with fish dishes, paired with traditional products, giving life to irresistible dishes such as Paccheri in pistachio cream from Stigliano and red tuna, Spaghettone alla chitarra in sea urchin pulp and clams, Cod ravioli in pumpkin cream and zucchini with scapece and mint. Traditional dishes such as orecchiette and turnip tops, Burnt wheat shavings, and Dragged cannot be missing.
